 दोस्तों आप सब साबूदाना से तो अवश्य परिचित होंगे। भारत में 40 के दशक से व्रत त्योहार उपवास में फलाहारी एवं पवित्र खाद्य पदार्थ के रूप में इसका उपयोग खूब होता रहा है। इसे सुपाच्य समझकर रोगियों के  पथ्याहार में शामिल किया जाता रहा है। परंतु क्या आपने कभी साबूदाने का पेड़ अथवा पौधा देखा है? या फिर इसे जमीन में रोपकर उगाने की कोशिश की है? आप ने भले ही कोशिश ना की हो पर मैंने जरूर की है। मगर मैं असफल रहा। समय के साथ यह जिज्ञासा परवान चढ़ती रही और अंततः मैं साबूदाना के रहस्य से परिचित हो गया। क्या आप सब दर्शक भी जानना चाहेंगे?संबंधित वीडियो

हकीकत : साबूदाना मुख्यता दो तरीके से फैक्ट्रियों में तैयार किया जाता है। यह किसी पेड़ का फल अथवा बीज नहीं है। सबसे पहले Sago Palm trees के तने से प्राप्त गूदे से बनाया जाता था। मूल रूप से अफ्रीकी उत्पत्ति वाले इस पौधे का तना बहुत मोटा होता है और इस मोटे तने के भीतर से गूदा निकालकर पीसा जाता है और पाउडर बनाया जाता है। इस पाउडर को फिल्टर कर गर्म करते हैं जिससे दाने बनते हैं। साबूदाना बनाने का सबसे मुख्य तरीका जो आज प्रचलित है सर्वथा अलग है। दक्षिण अमेरिकी मूल के कंद कसावा जिसकी खेती अफ्रीका महाद्वीप में सबसे अधिक की जाती है से सबसे अधिक साबूदाना बनाया जाता है। कसावा को टेपियोका रूट भी कहा जाता है। भारत में भी कसावा से ही साबूदाना बनाया जाता है। दक्षिण भारत के तमिल नाडु इत्यादि राज्यों में साबूदाने का उत्पादन होता है। सालेम जिले में कसावा की खेती सबसे ज्यादा होती है और वही सबसे अधिक टेपियोका स्टार्च प्रोसेसिंग प्लांट हैं। इस प्रक्रिया में 4 से 6 महीने लगते हैं। इस दौरान साफ किए गए और पील किए हुए कंदों को मैश कर पानी में सड़ने या फर्मेंटेशन के लिए छोड़ दिया जाता है। बाद में जो लुगदी प्राप्त होती है उससे फाइबर को अलग कर जेली जैसी संरचना वाली स्टार्च एनरिच पदार्थ प्राप्त करते हैं। इसे मशीनों में डालकर दाना बनाया जाता है और सुखा कर ग्लूकोस एवं स्टार्च पाउडर की पॉलिश की जाती है जिससे मोतियों जैसे चमचमाते साबूदाने प्राप्त होते हैं। भारत में 40 के दशक में साबूदाना बनाने का उद्यम कुटीर उद्योग के रूप में शुरू हुआ था। किंतु आश्चर्य की बात है की शेष भारत में ज्यादातर लोग इससे अनभिज्ञ रहे।

मेरी प्रतिक्रिया : यह सब जानने के बाद मेरे दिमाग में एक ही बात बार-बार आती है कि कसावा कंद को सड़ाकर आर्टिफिशियल तरीके से बनाया गया साबूदाना किस प्रकार पवित्र हुआ और उपवास के दौरान फलाहारी भोजन के योग्य माना गया? यदि किसी सुधि पाठक अथवा दर्शक इसका तर्कसंगत उत्तर ढूंढ कर कमेंट कर सकें तो बहुत आभार होगा।

पहले तो साबूदाने की खिचड़ी और खीर बनाई जाती थी किंतु अब इसकी बहुत सारी रेसिपी तैयार की जाती है और लोग मजे से उन्हें खाते हैं। साबूदाने का उपयोग ना केवल उपवास-फलाहार और रोगियों के पथ्याहार मैं बल्कि बहुत सारे फेवरेट रेसिपीज में भी किया जा रहा है। पापड़, तिलौड़ी, चाट- पकोड़े और विभिन्न प्रकार के व्यंजन में इसका उपयोग किया जा रहा है। लोग साबूदाने को पवित्र और धार्मिक उपयोग के योग्य मानते हैं। वे नहीं जानते कि यह कितने गंदे प्रोसेस से तैयार होता है। यहां हम साबूदाने की पापड़ रेसिपी दे रहे हैं इसका उपयोग आप अगले उपवास के दौरान कर सकते हैं।

रेसिपीज : 2 लीटर पानी में 100 ग्राम साबूदाना डालकर गर्म करते हैं। इसे तब तक पकाते हैं जब तक कि साबूदाना पूरी तरह से गल कर पानी को जेली जैसी ना बना दे। तब इसे चूल्हे से उतार लेते हैं गैस बंद कर देते हैं और छत पर साफ सूती कपड़ा बिछाकर कलछी से वह द्रव्य लेकर कपड़े के ऊपर छोटे-छोटे गोल धब्बे के रूप में फैलाते हैं और सूखने के लिए छोड़ देते। ऐसा करने से पहले मिश्रण में स्वादानुसार सेंधा नमक और थोड़ी मात्रा में गोल मिर्च पाउडर मिलाते हैं इससे नमकीन और चड़पड़ा स्वाद आता है। उपवास के दौरान कुछ लोग सेंधा नमक का प्रयोग शुद्ध मानते हैं और साधारण नमक का उपयोग अशुद्ध। कई दिनों तक सुखाने के बाद पापड़ तैयार हो जाता है जिसे सावधानीपूर्वक कपड़े से अलग कर लेते हैं और साफ सूखे डब्बे में स्टोर कर लेते हैं। जब भी खाने का मन हो इसे खाद्य तेल गरम कर तल लीजिये और मजे से खाइए। यह पापड़ बनाते समय शुरू में ही सावधानी बरतने की जरूरत होती है । जब साबूदाना पक रहा हो तब ध्यान रखें कि इसका टेक्सचर बहुत अधिक गाढ़ा ना हो और ना बहुत ज्यादा ढीला। यदि तिलौड़ी बनानी है तो पानी कुछ कम डालें और मिश्रण को गाढ़ा होने दे तथा कुछ दाने ऐसे हो जो पूरी तरह गले ना हो। इस मिश्रण में स्वादानुसार सेंधा नमक और तिल मिला लें। तिल को पहले हल्का भून लें। जब मिश्रण ठंडा होकर हाथ सहने योग्य हो जाए तब छोटी-छोटी


बड़ियों जैसे पिंड साफ कपड़े पर डालते चले जाएं और कई दिनों तक धूप में सुखाएं। जब यह तिलौड़ियाँ खूब सुख जाए तब कपड़े पर से इन्हें अलग कर ले और साफ-सूखे डिब्बे या मर्तबान में स्टोर कर ले। जब भी खाने का मन हो तो कढ़ाई में करू तेल गर्म करें,तिलौड़ियाँ डालें, ब्राउन होने तक तले और खाने का मजा ले।

Sabudana is mainly prepared in factories in two ways. It is not the fruit or seed of any tree. Sago was first made from the pulp obtained from the stem of palm trees. The plant, originally of African origin, has a very thick stem and the pulp is extracted from within this thick stem and ground into a powder. This powder is filtered and heated, due to which granules are formed. The main method of making sabudana which is prevalent today is completely different. Most of the sago is made from the tuber cassava of South American origin, which is widely cultivated in the continent of Africa. Cassava is also called tapioca root. In India too, sago is made from cassava. Sabudana is produced in the states of Tamil Nadu etc. of South India. Salem district is the largest producer of cassava and has the largest number of tapioca starch processing plants. This process takes 4 to 6 months. During this the cleaned and peeled tubers are mashed and left to rot or fermentation in water. After separating the fiber from the pulp that is obtained, starch-enriched substances with a jelly-like structure are obtained. It is put in machines and made into granules and after drying, it is polished to glucose and starch powder, from which sparkling pearls like pearls are obtained. The sago-making enterprise started as a cottage industry in India in the 40s. But surprisingly, most of the people in the rest of India remained unaware of it.
After knowing all this, the same thing comes to my mind again and again that how sago made artificially by rotting cassava tuber became holy and considered fit for fruit-vegetarian food during fasting? Earlier, sabudana khichdi and kheer were made, but now many recipes are prepared and people eat them with pleasure. Sabudana is being used not only in fasting-fruits and diet of patients but also in many favorite recipes. It is being used in papad, tilori, chaat-pakoras and various types of dishes. People consider sago as sacred and worthy of religious use. They don't know how dirty the process goes. Here we are giving sabudana papad recipe which you can use during your next fasting.
Put 100 grams of sago in 2 liters of water and heat it. Cook it till the sabudana melts completely and makes the water jelly-like. Then take it off from the stove, switch off the gas and spread it on the ceiling in the form of small round spots on the cloth by spreading a clean cotton cloth and leaving it to dry. Before doing this, rock salt and a small amount of round chili powder are mixed in the mixture, it gives a salty and spicy taste. During fasting, some people consider the use of rock salt to be pure and the use of common salt impure. After drying for several days, the papad is ready, which is carefully separated from the cloth and stored in a clean dry box. Whenever you want to eat it, fry it by heating edible oil and eat it with pleasure. While making this papad, care needs to be taken from the very beginning. While the sabudana is cooking, make sure that its texture is not too thick and not too loose. If you want to make tilodi, then add little water and allow the mixture to thicken and there should be some grains which are not completely melted. Add rock salt and sesame seeds to this mixture as per taste. Lightly fry the sesame seeds first. When the mixture cools down and becomes bearable, then keep on putting small shackles like nodules on a clean cloth and dry in the sun for several days. When these sesame seeds are dry enough, then separate them from the cloth and store them in a clean dry container or jar. Whenever you want to eat, heat the curry oil in a pan, add tilapias, fry till they turn brown and enjoy eating.
